Sinapius – One of Tasmania’s truly great wineries

Sinapius is nestled in the heart of Pipers Brook, a town within Tasmania’s renowned Tamar Valley wine region. It stands as one of the most celebrated wine names on the Apple Isle.

Founded in the mid-2000s by Tasmanian natives Linda and Vaughn, the couple established their vineyard using the high-density Burgundian style. This meticulous and laborious method produces low-yielding crops, allowing for maximum expression of the terroir.

Following Vaughn’s tragic passing in 2020, Linda continues the Sinapius legacy alongside their daughters, Esmé and Clementine.

While the estate’s foundation lies in the Burgundian varieties of Chardonnay and Pinot Noir, they also craft some of Australia’s finest expressions of Gamay, Gruner Veltliner, and Riesling.

Join us on July 1st as we explore some of Tasmania’s most exciting wines and hear the Sinapius story directly from Linda.

The wines will be complemented by a bespoke menu curated by our Head Chef, Lakhan Bhounsle, with each dish designed to perfectly match these exceptional vinous offerings.

When: 6pm, Tuesday 1st of July 2025
